This book is free online https://inventwithscratch.com/book/ - check out chapter 9. Warning - it is advanced and to teach kids in class how to make a really good platformer is extremely challenging in Scratch and I don't recommend it for teachers that are new to Scratch. Instead, just teach running, jumping and double-jumping with one ground - that is enough to make some interesting games.
This is one of the games one of my students created way back in 2015. The object is to jump over items that are coming from the right side at different heights with random timing. This game only has single high jumps and he also added sunglasses that come down from the top randomly that you have to catch. When he catches them, he wears them! You can remix it to make the game easier. This was a camp favorite to make - https://scratch.mit.edu/projects/70748276/
If you have advanced students - have them work through chapter 9 in the book independently. It is IMHO that once kids reach a certain level well beyond the basics, it is best that they practice and hone their skills with lots of independent practice - with teachers there for mentoring and coaching.
